Feature Friday: The Man of the House

You all get a special treat today!
My husband is our feature friday!!!
I have to take a second to brag on my husband. Next Monday, June 3, marks our 7 year wedding anniversary. I really can not believe that it has been 7 years since our wedding! I remember when we were dating, I couldn't wait until we were engaged, then I couldn't wait until we were married, and then I couldn't wait until we had babies (yes, I wanted to be a stay at home momma my whole life, that was my dream job! My momma made it look fun!) I wish I could tell that girl in such a hurry, to just slow down and enjoy that special time! But ya know..I knew how fun and special our life would be...and I was ready for it!
And I must say, that my life is better than I dreamt it would be.
NO our lives are not perfect...by far
And I'm really not trying to portray that AT ALL
But I must say my girls make our lives together that much sweeter!
 
And I am so thankful that I married a man with the same morals, values and life dreams.
So thankful that he wants me to be a stay at home mommy to raise our precious girls even though it means making sacrifices. This man works so hard, puts us first and is truly a special guy!
I really thank God for him everyday!
 
He doesnt cook much..
He grills and he has mastered his grill
but the Gronauer specialty is the Caesar Salad
and it is so good.
it is not your creamy caesar
but a mustard base, so a healthy caesar!
and its sooo delicious
and I bet a bunch of my friends will be happy to have this recipe!

 Hello Everybody!  I hope you enjoy my family's recipe for Cesar Salad.  My parents taught me to make this when I was in grade school and I have been making it ever since.  I feel like we were raised on it.  I tell you this because I have not measured out the ingredients in years (I just eyeball it) so I will do my best to give you easy-to-follow instructions.    Here is what you need:
 Fresh Garlic (2 or 3 cloves), 1 can of Anchovies, Dijon Mustard, Worchester Sauce, 1 Lemon, Apple Cider Vinegar, Olive Oil, Parmisan Cheese, and cracked black pepper. 
 Start by pressing the Garlic Cloves into a bowl. 
 
 Add the can of Anchovies and then mash and cut them into a paste with the garlic.
 Next, add 2-3 table spoons of Dijon mustard and mash it all together in to a paste.
 Now, add 2-3 table spoons of Worchester Sauce and stir in.
Then squeeze in one full lemon.  Make sure no lemon seeds end up in the sauce.
Next is the Apple Cider Vinegar.  I put in two overflowing capfulls. (yes, the vinegar bottle cap).
Now pour in one 1/4 cup of Olive Oil. 
Shake in enough graded parmisian cheese to lightly coat the whole bowl (approx 1/2 cup).
Then finish it off with a couple table spoons of fresh ground/cracked black pepper.
 
 Now just throw in some Romain and toss the salad!
 Tonight Christina made salmon and squash to go with it.

Changing it Up

Do you cook the samethings over and over? Do you get stuck in cooking ruts? I sure do! Maybe becuase I sometimes just want to cook something easy, something that I know the girls will eat good or just plain laziness or can't think of something new? I feel like this happens to me all the time. Lately, its been stir fry rut. Been cooking a lot of my basil chicken type suppers. The girls love it, its fast and easy. Have I mentioned Jacquelyn is obsessed with green beans lately but for some reason she calls them green carrots? Dont know why....my logic is that carrots were her favorite but now green beans our....so she has renamed them green carrots...who knows...the mind of a 2 year old!
 
So tonight it was time to cook something different! Something new...
For the girls plates....
Baked lemon chicken, potato sacks and succatash
 
For us, baked lemon chicken, salad, and zucchini with red onions

 
My mom used to make us these and we always thought they were fun.
Potato sacks.
Just chop up a potato with onion and bellpeppers(i was out so didnt put them)
Put them in little foil pouches, season with a little olive oil, lemon juice and tony's
Bake at 350 until potatoes are soft, about 45 mins



These are also fun to do with having a BBQ, you can throw them on the grill, then everybody just grabs their own little sack!
 
Succatash
Confession, this is one of my favorite side dishes, probably because my love of lima beans
Seriously underrated side dish!
 
Sautee onion in a little olive oil, add frozen corn and lima beans

Toss and season with salt, pepper and little red pepper

Add milk until it covers the vegetables like this


Bring up to boil, then turn down to medium, cover with crack and let milk cook out slowly
Finished product.
 
Hopefully this is some inspiration to break up the rut and try something new!
 
In case you were wondering the baked lemon chicken was super simple
4 boneless chicken breasts
olive oil
lemon juice
worteshire
salt
lemon pepper
garlic powder
oregano
basil
Bake 350 for about 1 1/2
It will fall apart
This is probably the girls favorite

Shrimp Salad

Anything better than cold seafood in the summer?
I think not!
and its super healthy, refreshing and doesnt leave you feeling gross
something you can eat by the pool!
 
With my leftover boiled shrimp from last night, I made
Shrimp Salad
Cut up
boiled shrimp, celery, tomatoes, bellpeppers, corn(leftover from the boil too) and fresh basil
I meant to put red onion but as I am typing this, just realizing I forgot
that is what happens when you are cooking with 2 toddlers bw in your legs
If I would have had parsley, I would have added that too
Seasoned with olive oil, tony's, lemon juice, lime juice and a little rice wine vinegar
Toss and taste
 
For lunch, I stuffed it in a half of an avocado

 
Its great with chips, lettuce cups or just by itself!
Yum.

A Perfect Pair

Broiled Salmon served over Kale Chips
 
I had a sweet girl help me clean and prep the kale.
I wash it and rip the leaves off
Place on baking sheet lined with foil
Toss with olive oil, salt, red pepper, lemon pepper
Bake at 350 until crispy

Right when you take them out, squeeze fresh lemon and toss a lil shredded parmesean
 
Salmon
Seasoned with little olive oil, lemon juice
Salt, red pepper, garlic powder, lemon pepper, oregano and basil
Baked at 350 for about 20 mins
Squeezed fresh lemon right when it came out of oven too
 
Served together making a perfect pair!

 
So I made baked potatoes for the girls since I figured they would not eat much of this.
Go figure...they did not eat more than 2 bites of their potatoes and wanted to eat our kale and salmon!
Living proof that we are our kids role models.
They want to eat what they see us eating!
So.. all my super liberal family and friends stop reading...
 
SO funny story-
when we were eating, i told jacquelyn that salmon was fish, like the fish in the sea
and she said, "fishy mommy?"
I said "yes, like nemo"
I knew this was probably the wrong thing to say.....and she would never eat it, but honestly it just came out my mouth without thinking...
But to my suprise, she said, "like nemo and dorie? ok." and opened her mouth and took a bite. and said "yum, I like it."
hahaa! win!
Growing up, my dad's family had a ranch and we always knew the cows we ended up eating and it never bothered me as a child...and I guess the apple doesn't fall far from the tree!
pretty happy about it too...

Sunday Supper

You know one of those days when everybody is in a good mood, everybody gets along....
its just a good day!
We spent the day oustide planting flowers, playing in the kids pool and water tables, painting flower pots, planting more flowers, eating popsicles and just plain SUMMER FUN!
If today is a predictor for the rest of the summer, its going to be a great summer.
I must say, its really nice that the girls play so well together and we can just relax and play at home!
 
Momma was craving shrimp, so shrimp boil day it was!
Northing is better than boiling some seafood after a day in the sun!
And a cold salad to go with it!
 
Avocado Cucumber Tomato Salad
 
Avocadoes, heirloom cherry tomatoes, cucumbers, fresh basil, juice of 1 fresh lemon, drizzle olive oil and a little Tony's.
 
Boiled Shrimp

 
Season a big pot of boiling water with beer, lemons, onions, salt, red pepper, garlic powder, lemon pepper and Tony's. You gotta use A LOT of seasoning too! If you want to cook any vegetables, do those first because they take longer to cook. We did corn on the cob today. Then boil the shrimp, they float when they are done but usually only about 4 minutes.
 
I made a few other things too. It was Sunday Supper after all!
And I wanted the girls to eat good after being outside and eating popsicles all day!
 
Sweet Potato Fries

 
Line a baking sheet with foil. Toss sweet potatoes with olive oil, salt, paprika, oregano and basil
Bake at 350 for about 30-45 mins, or until tender and crispy.
 
I also made a pot of
Stuffed Mishii  (spelling?)
This is another Lebanese Dish
Stuffed Mishii can be stuffed squash, bellpeppers or eggplant
 
First you prep your vegetables to be stuffed.
cut tops off of bellpeppers, deseed
Core out squash (there is such thing as a vegetable corer, a cooking tool)
I used both yellow and mexican squash
 
Prepare your stuffing:
1lb of lean ground meat (I used org grass fed)
1/2 cup of rice (you can make more just always use this ratio)
1/2 can of rotel
Season with salt, red pepper, garlic powder, lemon pepper and lil cinnamon
Mix it up really good using your hands, add a lil water when you are mixing it up, you want it to be moist (eww i know we hate that word but I couldnt think of another word to use!)
 

Stuff your vegetables generously with your stuffing.
Pack it in good
Tap the vegetable on your counter as you are stuffing it, packs it in better...
this is how my momma taught me! haha

Then you line them in your empty pot. Stand bellpeppers up then lay squash around.
Then add 1 can of tomato paste and 1 can of tomato sauce (I used 1 box of Pomi tomatoes)
You have to kind of push the sauce down and around all vegetables
Why not make sauce before you put the stuffed vegetables down you ask? I dont know, but my momma says that is just not the way to do it. Probably becasuse that is not how Sittee did it and we do it the way Sittee did it! :) keep the tradition :)
Add some water, turn fire on medium, use your spoon and even shake your pot a little to get teh sauce to come together. Make sure you add enough water so that it covers all of your vegetables. There has to be enough liquid to cook it and the rice and meat mixture in all your vegetables.
Season  your sauce with salt, red pepper, garlic powder, oregano and basil.
Cover and let come to a boil.

 



You are going to let it cook and boil for a long time.
Leave lid cracked open.
Let cook on a light boil for probably 2 hours.
When you are nearing the end, add fresh oregano and basil if you can. Not necessary but makes it even better!
 

When you serve it, make sure you pour sauce over it. I crack them open for the girls and pour sauce down the middle, and also to help cool them faster!
 
WAIT. So remember when you were coring out the squash, DON'T throw away the inside of the squash....
That is good squash.
So put it in a lil pot, then if you have any leftover meat mixture add that to it too. If not then just season the squash and cook it down.
I had a lil meat mixture left so I added that to my squash, added a lil sauce from my mishi pot and just let it cook down.

This actually makes me think of my Sittee. Whenever she would make mishi, she would always make a little pot of the insides for us. We always got excited about it, probably becasue we knew we would get a taste while we waited for the rest to cook.

Nothing beats Homeade Chicken Noodle Soup

When the babies are sick, momma makes homeade noodle soup.
Up until a few years ago, I actually hated soup because it made me think of being sick.
I guess it was because growing up, momma always made it when one of us were sick.
And now I do the same, but as my momma says, its like medicine!
This is also probably one of my most requested recipes.
 
Homeade Chicken Noodle Soup
 
Start off boiling a whole chicken (I think its super important to use an organic chicken too)
Add whole cloves of garlic
The more the better
Garlic is a natural antibiotic

Season with salt, red pepper, lemon pepper, garlic powder and cinnamon
Use a lot too!
Here is a picture of my pot, right after I seasoned it, wanted to show you how much I season it!

Then Boil baby Boil!
The longer the better, the richer your stock and the more medicinal....

I boil for a long time, like 2 hours....
About half way through I add chopped onion, celery and carrot

Boil again....
and boil some more
Probably a total of 2-3 hours
When it falls apart, then its time to take it out.
BE VERY CAREFUL, its BOILING HOT!
Literally, ha!
I usually use tongs and a big spoon.

Let it cool.
Turn your pot down a bit.
Just let it simmer while you let your chicken cool.
Then de-skin and de-bone.
Add chicken back.

This is what my de-boned, de-skinned chicken looks like...
 

Then bring it back up to a boil and add whatever noodles you want.
Once the noodles are cooked, taste and see if you need to add any seasoning.
Turn off
Chop flat leaf italian parsley and add.

Heatlhy Eats

So tomorrow Jerry and I are starting our 24 day challenge.
Super excited!
 
We did some meal prep this week so its easy for us to eat healthy!
Started with making these egg white muffins for fast breakfasts:
 
Egg White Muffins
Spoonful of store bough pico in each muffin

Cracked 1 egg white in each muffin
Sprinkled with Tony's

Bake at 325 for about 30 minutes or all the way cooked through.
Refrigerate and then microwave for about 30 secs when ready to eat.
I usually eat 2 for breakfast.

 
I will make ham, cheese and green onions with full eggs for the girls!
 
We had planned to have some friends over for a BBQ this weekend, but then the girls got sick so we canceled.
I had already marinated all the meat, so we went ahead and grilled it all.
 
Orange Roughy- marinated in lemon and lime juice, olive oil, salt, lemon pepper, red pepper, oregano and basil.
Strip Steaks-marinated with worteshire, soy sauce, salt, red pepper, garlic powder, lemon pepper
Chicken breasts- marinated in lemon juice, olive oil, worstechire, salt, red pepper, garlic powder, and lemon powder.
Jerry grilled it all to perfection.

We ate the fish and steaks over the weekend.
I sauteed a big batch of mixed vegetables-squash, eggplant and bellpeppers in olive oil, lemon juice, salt, red pepper, lemon pepper, oregano and basil.
 
Sliced up the chicken breasts and made tupperware meals with the chicken and vegs for easy and fast grab and go meals for us!
I also made a big batch of rice dressing for the girls.
However, they are not feeling well, so I will be making a big ol' pot of homeade chicken noodle soup tomorrow morning. Nothing like old fashion homeade soup-like medicine!

Feature Friday

We are back for our Feature Friday. Today we are featuring my other sister, Jen.
Jen is the middle sister and otherwise known as my mother's mini-me. Can you tell?


Jen recently got engaged to Brandon and they are getting married next January and most importantly my two sweet girls get to be the flower girls! We are ALL very excited! According to Jacquelyn, Jen is going to be a princess and be so pretty, she is only going to dance with Pops and Brandon is going to be a REAL prince!!! Whenever we talk about the wedding, this is what she tells me...she's got it pretty straight! Let her believe in the fantasy as long as possible!!!!

Her and Brandon recently moved in together and I have to say, she is really taking to the whole domestic role pretty well! We ALL know Jen is VERY messy...but every time I have been to their place it is very clean. She is an AWESOME cook and always has a plate ready for Brandon!
This is one of his favorite things she cooks.

Mediterranean Lamb Chops and Quinoa


Lamb Chops

Drizzle lamb chops with fresh lemon juice and olive oil
Season with salt, red pepper and garlic powder
Sprinkle chopped fresh mint and garlic
Rub mint, garlic and season into the lamb
Turn lamb and repeat

Serve with Tzatziki Sauce, recipe can be found under labels.

Quinoa

Cook quinoa as directed on package
Once cooked, pour into a bowl, drizzle with fresh lemon juice 
and olive oil, stir and place in refrigerator.
Once it is cool, dice the following and add to quinoa:
                            jalapeno
                            onion
                            red bell pepper
                            tomato
                            cucumber
Add chopped fresh mint.
Season with a little more lemon, salt, red pepper and a little Tony's.
