Cheesy Sausage Muffins

These yummy, cheesy super easy sausage mcmuffins is a recipe I learned from my good friend Kristan. I had them at her house and quickly got the recipe from her and use them for holiday mornings or when having house guests. Great to have made ahead, in freezer-fast and yummy!

We are headed to a fun weekend at the lake with some of Jerry's best friends from college and wives! Excited for an adults weekend! I made a big batch of these and put in the freezer to bring!

Recipe-
1 package of Owens sausage
1 jar of old English cheese
1 package of 6 English muffins 

Brown sausage(this morning I made a double batch, 1 package of regular and 1 package hot Owens sausage)  and 2 jars of old English cheese.
Let cheese melt and come together with the sausage.
Spoon on half an English muffin
Cut them in half or quarters
All the muffins ready to go.
Then place in freezer

In my freezer, after they freeze for about 1 hr, I put them in ziplock bags and have in freezer.
When ready to serve-
Place on cookie sheet and bake at 350 for 15 mins or toast in toaster oven.

Heatlhy Eats

So tomorrow Jerry and I are starting our 24 day challenge.
Super excited!
 
We did some meal prep this week so its easy for us to eat healthy!
Started with making these egg white muffins for fast breakfasts:
 
Egg White Muffins
Spoonful of store bough pico in each muffin

Cracked 1 egg white in each muffin
Sprinkled with Tony's

Bake at 325 for about 30 minutes or all the way cooked through.
Refrigerate and then microwave for about 30 secs when ready to eat.
I usually eat 2 for breakfast.

 
I will make ham, cheese and green onions with full eggs for the girls!
 
We had planned to have some friends over for a BBQ this weekend, but then the girls got sick so we canceled.
I had already marinated all the meat, so we went ahead and grilled it all.
 
Orange Roughy- marinated in lemon and lime juice, olive oil, salt, lemon pepper, red pepper, oregano and basil.
Strip Steaks-marinated with worteshire, soy sauce, salt, red pepper, garlic powder, lemon pepper
Chicken breasts- marinated in lemon juice, olive oil, worstechire, salt, red pepper, garlic powder, and lemon powder.
Jerry grilled it all to perfection.

We ate the fish and steaks over the weekend.
I sauteed a big batch of mixed vegetables-squash, eggplant and bellpeppers in olive oil, lemon juice, salt, red pepper, lemon pepper, oregano and basil.
 
Sliced up the chicken breasts and made tupperware meals with the chicken and vegs for easy and fast grab and go meals for us!
I also made a big batch of rice dressing for the girls.
However, they are not feeling well, so I will be making a big ol' pot of homeade chicken noodle soup tomorrow morning. Nothing like old fashion homeade soup-like medicine!

Protein Pancakes

Several years ago I started making what I call protein pancakes. If you knew me right after college, you probably heard about this recipe.
The original recipe
4 egg whites
1/2 c oats
spoonful of fav jam/fruit preserve
blend and cook like a normal pancake
Over the years my mom and I have come up with all sorts of different versions.
Here is a version I made to have for quick bfasts this week
I made a big batch (same ratios as above)

12 egg whites
1 1/2 c of gluten free oat flour (its what I had so I used, i normally used gluten free oats)
1/2 cup of frozen blueberries
1 banana
lots of cinnamon
you can also add agave to make it a lil sweeter
 
Blend it all up together
Pour on sheet pan, sprayed with cocunut oil spray
Bake at 350 until they are cooked all the way through, they will prob crack
I didn't say they were the prettiest, although the girls thought they were bc they were purple!
Pancakes for fast bfasts for the girls this week ready to go!
I warm them up and spread cocunut oil on instead of butter. My girls LOVE cocunut oil!
 
You really can't go wrong with all different kinds of fruit/vegs combinations. Zuchhini really goes well in them! I'll feature more good combinations...
