Cheesy Sausage Muffins

These yummy, cheesy super easy sausage mcmuffins is a recipe I learned from my good friend Kristan. I had them at her house and quickly got the recipe from her and use them for holiday mornings or when having house guests. Great to have made ahead, in freezer-fast and yummy!

We are headed to a fun weekend at the lake with some of Jerry's best friends from college and wives! Excited for an adults weekend! I made a big batch of these and put in the freezer to bring!

Recipe-
1 package of Owens sausage
1 jar of old English cheese
1 package of 6 English muffins 

Brown sausage(this morning I made a double batch, 1 package of regular and 1 package hot Owens sausage)  and 2 jars of old English cheese.
Let cheese melt and come together with the sausage.
Spoon on half an English muffin
Cut them in half or quarters
All the muffins ready to go.
Then place in freezer

In my freezer, after they freeze for about 1 hr, I put them in ziplock bags and have in freezer.
When ready to serve-
Place on cookie sheet and bake at 350 for 15 mins or toast in toaster oven.

Not chicken and rice...


But might as well be!
I found these thin organic chicken breasts on sale and decided to make something new up for dinner.
It's kind of a spin of chicken picatta.
I started off with a little olive oil, lots of fresh squeezed lemon juice and the thin chicken breasts 
Seasoned with Tonys, garlic, basil
Let chicken breasts cook and get tender.
Added a little chicken broth to add a little juice. And added frozen baby peas.
Also topped with fresh basil.
Boiled some orzo ( even when we eat pasta it's like rice) and poured chicken and juice over it. 
Topped with fresh Parmesan cheese.
Tada as Jacquelyn would say!
It was pretty good
Next time I would start by sautéing onions and fresh garlic then add the chicken to give it more flavor!
The girls did love it!

Spanish Rice

Yesterday we went to a friends place for a grill out and I was in charge of bringing the sides to fajitas. So I brought Spanish rice and refried beans.
I make my refried beans pretty easily. 2 can of low sodium pinto beans, season with salt, red pepper and cinnamon and cook for about 20 mins, drain about 80% of liquid, take my hand held emolisifier and purée the beans! 
I wanted to make a Spanish rice but have never made it, so of course I went to Pinterest and read a couple different recipes then made my own version.
I first blended 1large can of whole tomatoes with 1/2 onion. Set aside.
Sautéed the other half of the onion in olive oil, added 2cups rice.
Added 1/2 can of rotel and stirred.
Added 2cups of tomatoe/onion purée and 2 cups of chicken broth.
Added 1/2 cup of frozen corn and frozen peas. 
Seasoned with salt, red pepper, garlic powder, paprika and a lil chilli powder.
Stirred and covered half way and let cook down, stirring occasionally so it didn't stick.

I think it came out pretty good.
Everyone seemed to enjoy it and the girls def liked it!

I've been cooking mostly quick stir fries like the lemon basil chicken!
Tonight I'm making Beccas Lebanese chicken thighs!
