Oven baked BBQ chicken

My husband mans the grill in our house and have to say does a great job at it too! But during the week, he doesn't get home early enough to help out for dinner so I have learned some ways around that! So tonight I made oven baked BBQ chicken.
I had 4 skin on bone in split chicken breasts. They are quite large, so I used a really sharp knife and cut them in half. Put them on a foil lined cookie sheet. 
First seasoned with salt, garlic powder, red pepper and paprika.
Then poured some BBQ sauce (use your family's favorite store bought, I used sweet baby rays) and then rubbed all the sauce and seasonings into the chicken.
Looked like this-
 

Baked on 350 for two hours. Occasionally, checked on it and basted it with the sauce (didn't make extra sauce to baste, just used sauce that was on the pan) 
For the last 15 mins, I uncovered it, to crisp up the top.

 

I served this some baked potatoes, sautéed Brussel sprouts, cornbread and salad!

Lebanese White Fish

Yum yum yum!!!
If you aren't a big fish fan, but know you should eat it for the health benefits...here's your dish! The sauce is so good, it masks any fishiness!
And the sauce is made of vegetables making this a very healthy supper!

Start by making the sauce



In a skillet, I melted a heaping spoonful of ghee, then added sliced 2 bellpeppers, onion and 4 tomatoes. Season with salt, lemon pepper, garlic powder, red pepper, and sweet basil. 
Squeeze juice of 1 lemon and go around the pot twice with basalmic vinegar. Stir everything really well and cover and cook on medium. 
Occasionally stir and as the tomatoes cook down, press them with the back of your spoon smushing them.
Vegetables will create a sauce but your onions and peppers will still be in tact, soft but in tact.
Add chopped fresh Italian parsley. 
 
At this point your sauce is ready.

Prepare your fish by simply rinsing and placing in a baking dish.
 

I am using two snapper filets that I had the butcher debone and deskin.
You can use any white flaky fish. I started making this dish in college a lot (Kristan, look familiar?) and used tilapia. Now, I know how disgusting that fish is and no longer buy it or any farm raised seafood for that matter...because we you know better you do better! 
So just any wild caught white, flaky fish will do!

Then you pour your sauce right on top. 
 

I skip this part, but at this point I would quickly roast some pine nuts and sprinkle on top! Gives a nice crunch! Cover with foil and bake at 350 for 30 mins or until fish is done.

Serve over Syrian rice.
Or if you are low carb like me, you will enjoy it just as much without the rice!

Turkey Chilli

I'm on a turkey roll this week...not planned but I guess I'm subconsciously getting in the fall spirit.
I make several different versions of chilli and this is a good weeknight, not as heavy version.

Start by sauteeing my vegetables
 
Onions, celery and bellpepper
 
Once they are softened, add 2lbs of ground turkey 
Brown turkey meat
Once browned all the way through, season
 

Then add your beans and tomatoe sauce
 

I used one can of kidney beans, black beans and pinto beans and 1 can of tomatoe purée.
Stir really well, cover and let simmer for a good hr.
Taste and season if need. 

My favorite way to eat chilli is stuffed in a sweet potatoe...
 

My kids love making chilli bowls-
Rice, sometimes Fritos (frito pie), chilli and cheese topped with avocado.

And chilli makes for great leftovers...
Our favorite this is to make chilli nachos watching football!!

Turkey chicken salad

Last week I shared how I meal prep, menu plan, grocery shop and then organize my fridge to make for an easy week. Part of that, I usually try and prep something fast and easy for me to eat on for lunches. Now that my kids are in school, it's really tempting to eat out for lunch a lot but that gets expensive...
If I make something ahead of time, I'm more likely to eat at home. One of my favorite things for lunch is to make a chicken or turkey salad:
I cheat by buying a pre made rotisserie chicken or turkey breast at the grocery store.
I like to add chopped celery, red onion and raw almonds. 
Squeeze half a lemon and a couple of spoonfuls on mayo, season with Tony's!
 

You can eat with crackers, half of a bellpepper, or my favorite: stuffed in an avocado or tomatoe

Basil Chicken

So this is probably one of my girls favorite dishes. When they ask for chicken and green beans...this is what they are asking for!
It's super fast and easy too!

I slice up 4 chicken breasts and place in a pot with a little olive oil, juice of 1/2 Lemon and braggs amino acids. Season with salt, garlic powder, lemon pepper and red pepper. Stir and cover and let chicken cook all the way through. 
 
While your chicken cooks, get your vegetables ready.
Chop, onion, bellpepper, wash green beans and fresh basil.
 

 

Once your chicken is cooked all the way through, add all your veggies and basil and add some of my fav coconut teriyaki sauce.  Stir it up. Cover and cook on medium low and just let the vegetables cook down a bit. 
 
 

That's it! Super fast, super easy and one of my girls favorites!
I serve it over rice for the girls and Jerry and it's fulfilling enough with all the veggies to eat low carb like I do and skip the rice!

Honey Pork Tenderloin

Well it was the most beautiful 70 and sunny day here in Houston- welcome Fall!!!!
Fall was def an inspiration for tonight's meal!

Honey Pork Tenderloin

Washed and placed my pork tenderloin in baking dish.
Seasoned with salt, garlic powder, dried mustard, red pepper and cracked pepper. 
Worsteshire, pick a pepper, Dijon mustard and honey.
 
To give you an idea of how much of everything I put on....I don't ever measure....that takes too long! 
Rub it all together!
 
Cover with foil and bake at 350 for an hour. I like my pork cooked well done. Al the extra juices will make for a good sauce!

Tonight I made a parsnip and sweet potatoe purée to go with the pork. 
I peeled and cut up one bag of parsnips and 4 sweet potatoes, placed in a pot and boiled until they were soft. 
 
Then I used a masher and smashed the vegetables. 
 

Then I added to big spoons of ghee, 1/4 can of coconut milk, salt and cracked pepper...stirred it up. 
 

Not the best picture...but it's a yummy and healthy alternative to mashed potatoes. 

I simply sautéed some onions and a red bellpepper in ghee to finish out the meal. 
 


Tasted like Fall!

Teriyaki Salmon

So after cleaning his plate tonight, my husband said this was one of the best things I made lately!
The best part it only took 20 mins to make!

Teriyaki Salmon
Simply seasoned with salt and pepper
Lemon juice (juice of an orange would be even better) braggs aminos, coconut teriyaki and little drizzle of honey. 
Baked at 350 for about 20 mins.

 


For the side I wanted to try and recreate my favorite veggies at a local Vietnamese rest we eat.
Stir fried green onions, chopped garlic and sugar snap peas in olive oil, lemon juice and the coconut terriyaki sauce at the end. Seasoned with salt, lemon pepper and red pepper. 


 

For the girls and Jerry I warmed up leftover rice from last night and served on top.

I wasn't sure if they would like the snap peas so I gave them some leftover green beans that needed to be eaten but they Loved the snap peas! And crazy enough my kids call salmon "nemo" (bc it's orange I guess???) and they love it!
