Lebanese White Fish

Yum yum yum!!!
If you aren't a big fish fan, but know you should eat it for the health benefits...here's your dish! The sauce is so good, it masks any fishiness!
And the sauce is made of vegetables making this a very healthy supper!

Start by making the sauce

In a skillet, I melted a heaping spoonful of ghee, then added sliced 2 bellpeppers, onion and 4 tomatoes. Season with salt, lemon pepper, garlic powder, red pepper, and sweet basil.
Squeeze juice of 1 lemon and go around the pot twice with basalmic vinegar. Stir everything really well and cover and cook on medium.
Occasionally stir and as the tomatoes cook down, press them with the back of your spoon smushing them.
Vegetables will create a sauce but your onions and peppers will still be in tact, soft but in tact.
Add chopped fresh Italian parsley.

At this point your sauce is ready.

Prepare your fish by simply rinsing and placing in a baking dish.

I am using two snapper filets that I had the butcher debone and deskin.
You can use any white flaky fish. I started making this dish in college a lot (Kristan, look familiar?) and used tilapia. Now, I know how disgusting that fish is and no longer buy it or any farm raised seafood for that matter...because we you know better you do better!
So just any wild caught white, flaky fish will do!

Then you pour your sauce right on top.

I skip this part, but at this point I would quickly roast some pine nuts and sprinkle on top! Gives a nice crunch! Cover with foil and bake at 350 for 30 mins or until fish is done.

Serve over Syrian rice.
Or if you are low carb like me, you will enjoy it just as much without the rice!

Teriyaki Salmon

So after cleaning his plate tonight, my husband said this was one of the best things I made lately!
The best part it only took 20 mins to make!

Teriyaki Salmon
Simply seasoned with salt and pepper
Lemon juice (juice of an orange would be even better) braggs aminos, coconut teriyaki and little drizzle of honey.
Baked at 350 for about 20 mins.

For the side I wanted to try and recreate my favorite veggies at a local Vietnamese rest we eat.
Stir fried green onions, chopped garlic and sugar snap peas in olive oil, lemon juice and the coconut terriyaki sauce at the end. Seasoned with salt, lemon pepper and red pepper.

For the girls and Jerry I warmed up leftover rice from last night and served on top.
Husband's dish

My girls

I wasn't sure if they would like the snap peas so I gave them some leftover green beans that needed to be eaten but they Loved the snap peas! And crazy enough my kids call salmon "nemo" (bc it's orange I guess???) and they love it!

My dish

Fast, healthy and yummy!

Father's Day Fish Fry

For Father's Day, my family came over and we had a fish fry.
For as long as I can remember, this is the way we fried fish.
Really, I think with this recipe you could fry anything and it would be so good!
I did not take step-by-step pictures, because lets be honest..it was kind of crazy so I only got this shot of the fried fish but I thought I would still share the recipe!

Marinate fish preferrably overnight in yellow mustard and tabasco.
No specific measurement or ratio, depends on how hot you want it!
I had 2 bags of fish.
In each bag I used 1 big bottle of yellow mustard and 3/4 bottle of tabasco!
Then we batter it in 1/2 flour and 1/2 cornmeal seasoned with Tony's
Then we deep fried it
Right when it comes out of the fryer, sprinkle with Tony's

Enjoy!

A Perfect Pair

Broiled Salmon served over Kale Chips

I had a sweet girl help me clean and prep the kale.
I wash it and rip the leaves off
Place on baking sheet lined with foil
Toss with olive oil, salt, red pepper, lemon pepper
Bake at 350 until crispy

Right when you take them out, squeeze fresh lemon and toss a lil shredded parmesean

Salmon
Seasoned with little olive oil, lemon juice
Salt, red pepper, garlic powder, lemon pepper, oregano and basil
Baked at 350 for about 20 mins
Squeezed fresh lemon right when it came out of oven too

Served together making a perfect pair!

So I made baked potatoes for the girls since I figured they would not eat much of this.
Go figure...they did not eat more than 2 bites of their potatoes and wanted to eat our kale and salmon!
Living proof that we are our kids role models.
They want to eat what they see us eating!
So.. all my super liberal family and friends stop reading...

SO funny story-
when we were eating, i told jacquelyn that salmon was fish, like the fish in the sea
and she said, "fishy mommy?"
I said "yes, like nemo"
I knew this was probably the wrong thing to say.....and she would never eat it, but honestly it just came out my mouth without thinking...
But to my suprise, she said, "like nemo and dorie? ok." and opened her mouth and took a bite. and said "yum, I like it."
hahaa! win!
Growing up, my dad's family had a ranch and we always knew the cows we ended up eating and it never bothered me as a child...and I guess the apple doesn't fall far from the tree!
pretty happy about it too...

Lebanese Tuna Salad

This is another great fast and healthy staples to make big batches of to eat on. It is a totally different way to make tuna salad but I have to say, that whenever I have served it to people for the first time, they love it! It is also great for the summer because it is so light and refreshing.
I used 3 big cans of white albacore tuna
Chopped one bunch of italian parsley (leafs only, yes you have to de-stem it)
Chopped one bunch of green onions
Sesaon with Tony's, once around the bowl of olice oil, 4 times of lemon juice and 1/2 way of lime juice.
Mix well and chill.

Great stuffed in half of an avocado or tomato, lettuce wrap style or just by itself!

Fish Friday

If you knew me in college, you knew I was obsessed with 2 things: Salmon and Spinach Salad.
Well, 2 pregnancies later I can no longer eat raw spinach. If it is hidden in a mixed salad and it touches my tongue, my gag reflex kicks in immediately!
BUT I still love Salmon!!!
I cook salmon usually once a week.

Here's Jerry's favorite way-
Place on broiler pan
Season with touch of olive oil, lemon juice and balsamic vinegar
Salt, red pepper, garlic powder, lemon pepper, basil and oregano
Broil for like 10 mins prob max
You have to watch it bc the broiler cooks it so fast, and you dont want to over cook it but I do not like it under cook it so I really watch it pretty closely.

I cooked this for lunch one day so I would have salmon just to eat on for the week and didn't get a picture.....Will get one next week!
I wish I could say my girls ate salmon but so far havent been successful. It is a strong fish though but if they keep seeing us eat it, they will eventually.
They do like other lighter fishes like tilapia and Giuliana loves tuna...
Those recipes to come!
