Herb lemon crabfingers

Easiest, yummiest appetizer 
When I see crabfingers at the grocery store, I can't pass them up!
They are the easiest thing to make

In a sautee pan, melt a spoonful of ghee, juice of 1 1/2 lemons. 

Rinse your crab fingers then add to your pan.

 

Season with salt, lemon pepper, garlic powder and red pepper. Let them cook on medium for about 15 mins and too with fresh basil.

Grandparents Day BBQ

Yesterday we had over the girls grandparents to celebrate grandparents day! Jerry BBQ and I cooked up the rest!
One favorite was this appetizer

Jumbo lump crabmeat salad
1 lb of jumbo lump crabmeat (fresh not pasteurized!)
Then rinse it and pick out any shells, place in bowl and squeeze a lemon over it.
I added chopped onion, orange and yellow bell peppers, celery and cherry tomatoes. Finished it with fresh basil.
Seasoned with Tony's, olive oil, lemon juice and a tad bit if rice wine vinegar. Toss good and chill until served! I placed it in a bowl lined with romain lettuce leaves to make lettuce cups!
Avocado is good in it too!
Very fresh and soo good when the crabmeat is good!

Another favorite was a dessert I kind if made up...

Peach and Blueberry crumble
4 ripe peaches sliced and 1piny of blueberries.
Tossed with a 1/4 c of sugar and placed in a baking pan.
Crumble -
1c of flour
Lots of cinnamon
1/4 c of sugar
1/4 c brown sugar
Tsp of salt 
Tsp of vanilla
6tbsp of softened butter

Used my hands to thoroughly combine it so it all came together and created a paste/dough. Then just crumbled it over the berry mixture and baked at 375 for about 45 mins and served over homemade vanilla ice cream!

Humus

Tonight my AWESOME cousin Bret is in town from KC

 So tonight I am cooking up a family style dinner.
Humus
Roasted chicken(recipe to come)
Rice dressing (recipe on previous post)
Baked Vegetables
Greek Salad
 
So this afternoon I made my humus for tonight
Its always best to make it ahead of time, so it has time to chill and set
 
First put all your ingredients in food processor or blender
Here I have 2 cans of rinsed chickpeas
3 cloves of garlic (ratio is 1 garlic clove to 1 can of chick peas but we like it extra garlic)
2 heaping tbsp of tahini
lemon juice
Season with salt, red pepper and sumac (lebanese seasoning)
I dont measure, but this is how much lemon juice I put in
Fresh lemon juice is best

Blend away, I had to add a little warm water to get consistency right
Taste and season if needed
 
Chill
 
Top with Sumac or Paprika when serving

 
 
***Sumac is a lebanese seasoning my mom and I discovered about 6 months ago. Its red/brown in color but very refreshing and lemony. Gives pretty color too! It is delicious and aids in digestion! Add it to your seasoning cabinet!
